Berruecos means "place full of rocks". This coffee consists of nine smallholder farms surrounding the town of Arboleda. The farmers here work very diligently to grow, harvest, and process their coffees. Each farmer processes their coffee using a different washed method which is what makes coffee so unique and exciting. Some coffees undergo longer fermentation times, whereas others include an additional period of in-cherry fermentation before depulping. The wide variety of techniques used to process this coffee has created a very sweet and complex flavour profile in the final cup.
